Hi, I'm Amanda Millar!
I created Outposts of Eden because I believe every woman was made to flourish, not just survive. After my own long road through chronic fatigue, digestive dysfunction, hormone imbalance, and surgery, I know how overwhelming it is to search for answers and wonder if you'll ever feel like yourself again. That journey shaped the way I now care for the women I have the privilege of serving.
As a Certified Nutritional Therapy Practitioner, I help women uncover the root causes behind gut and hormone imbalances through personalized nutrition and sustainable change. My approach is grounded in both science and hospitality, shaped by advanced functional nutrition training and years spent creating meaningful experiences across three continents. Healing, I've come to believe, comes not only from what we eat, but from the rhythms, environments, and relationships that surround us.
I don't believe in chasing perfection or the next quick fix. Real health comes from understanding your body, working with it instead of against it, and returning to the simple foundations that let it heal: nutrient dense food, restorative habits, targeted support when needed, and a root cause approach that asks why symptoms exist rather than masking them.
My role isn't to hand you a meal plan. It's to help you understand the story your body is telling and walk beside you as you reclaim your health, so you leave not just feeling better, but equipped with the knowledge, confidence, and tools to care for yourself for years to come, living with the freedom, gratitude, and joy you were created for.

The Story Behind Outposts of Eden
For much of my life, I believed exhaustion was simply something to push through. As the oldest daughter in a large family, I was always moving, always achieving, always carrying responsibility, whether it was handed to me or I quietly took it on. I built a life around hospitality, beauty, and adventure, leading expeditions through Alaska and New England, managing a safari lodge in Zambia, helping launch a nonprofit, and chasing opportunities around the world before I turned twenty five.
From the outside, my life looked full. But beneath the surface, my body was quietly beginning to unravel.
For years I pushed through relentless fatigue, digestive issues, hormonal imbalances, brain fog, and chronic stress. Like so many women, I was told everything looked “normal.” Deep down, I knew it wasn't.
Then, in late 2024, just days before I was set to leave for Europe and South Africa, I felt something in my abdomen that stopped me in my tracks. I canceled the trip, and within weeks I learned I had a cantaloupe sized tumor growing on my right ovary.
What I expected to be a straightforward surgery became the beginning of a much deeper journey. As I sought both conventional and integrative care, I uncovered a tangled picture of gut dysfunction, hormone imbalances, adrenal exhaustion, immune dysregulation, nutrient deficiencies, and parasitic infections. For the first time, I understood that my symptoms were not isolated problems to fix, but connected pieces of a larger story my body had been trying to tell for years.
Instead of asking how to make my symptoms disappear, I began asking what my body was trying to communicate. That question changed everything. As I learned to nourish my body with real food, restore my gut, support my nervous system, and embrace slower rhythms of living, I discovered that healing is about far more than nutrition. It is about creating an environment where the body can do what it was designed to do.
By God's grace, after months of intentional preparation and the courage to advocate for my own long term health, my surgeon was able to preserve my ovary, something I had been told would likely be impossible. That experience forever changed the way I understand health, healing, and the resilience of the human body.
Outposts of Eden was born from that transformation. It exists because I believe every woman deserves more than another quick fix or an explanation that leaves her feeling dismissed. She deserves someone who will listen, help her understand the story her body is telling, and walk beside her as she rebuilds her health from the ground up.
I believe our bodies were created with extraordinary wisdom.
When we give them the nourishment, support, and environment they need, they often have a remarkable capacity to heal. Healing doesn't always look the way we expect, and I would never promise a particular outcome. But I do believe there is hope, and it would be an honor to walk alongside you as you pursue it.
